Fennel Seeds

Fennel seeds, known in India as “saunf”, are small, sweet and aromatic seeds of the Foeniculum vulgare plant. They are loved as an after-meal mouth freshener and are used in curries, pickles, spice blends and baking.

Description

Fennel seeds are oval, ridged and green to pale yellow in colour. Their sweet, liquorice-like flavour comes from anethole, the same compound found in star anise. Bright green, bold seeds with a strong aroma are considered the best quality, and Lucknowi saunf is a well-known fine variety.

History

Fennel is native to the Mediterranean region and was used by the ancient Egyptians, Greeks and Romans as food and medicine. It reached India centuries ago, and today India is one of the world’s largest producers, with most of its crop coming from Gujarat and Rajasthan.
